Homemade Vegan Zucchini Brownies


My friend posted this recipe a while back on Facebook, and I finally got the time to make them. They are really good!!

2 cups flour
1 1/2 teaspoons salt
1 teaspoon baking soda
1/2 cup cocoa
2 tablespoons vanilla
1/2 cup oil
2 cups peeled and grated zucchini

Directions:
1. Combine the flour, sugar, salt, baking soda, and cocoa in a bowl
2. Add the vanilla, oil, and mix well
3. Bake in an ungreased 9X13 pan at 350 degrees for 30 minutes

Survey says… YUMMY! They were super moist and chocolatey. We used a food processor to shred up the zucchini, so there were no chunks. It’s a great way to get kids to eat more vegies.
